Cascaritas Barolo
Cascaritas Barolo is a light-roasted Arabica coffee of the Parainema variety, grown by Hidardo Hernández and his family on Finca Cascaritas in Honduras. Its experimental process uses Barolo yeast for fermentation.
In the cup, we taste cherry, grape, vanilla, and tea. We recommend it for Pour Over, filter coffee, AeroPress, and modern espresso.

About Cascaritas Barolo
Cascaritas Barolo grows at 1,300 m elevation on Finca Cascaritas in Honduras. Hidardo Hernández cultivates this microlot with the Parainema variety.
Hidardo is interested in experimental cultivation and processing methods, particularly the use of specialized yeast cultures to control fermentation. For this lot, he uses Barolo yeast, traditionally used to make Barolo wine in Piedmont.
The coffee is inoculated with Barolo yeast and fermented for 36 hours as an Anaerobic Natural. It is then dried whole in the sun on African raised beds.
The result is a light-roasted coffee with deep sweetness and notes of cherry, grape, vanilla, and tea.

Chris recommends the following recipe for brewing Cascaritas Barolo with the Hario V60
Boil 300g water. Weigh 16g coffee beans, grind to coarse to medium coarseness. Add coffee grounds to filter, and lightly shake to level. Pour 30g water at 92°C evenly over the grounds. Let bloom (de-gas) for 30 seconds. Pour the remaining water in 2-3 rounds spread over 45 seconds. Enjoy.

Customer Reviews
Funky Flavor-Bombe.
